As a native Japanese, I have grown up using Binchotan 🙂
What the heck is Binchotan?
Binchotan is written as 備長炭 in Japanese.
Originally from Wakayama in Kishu area. (not kyushu, don’t mix up 🙂
Bincho-tan (Tan means Charcoal) is a burnt tree sticks with super high temperature.
During the procedure trees capture massive amount of oxygen inside.
I hear that captured-air does a magic to many occasion…that I am going to show you, how you can use Binchotan!

How to Prepare Binchotan
You need to clean Binchotan before using it.
Here are steps you can follow! Usually when you first open from a package, your fingers will be a bit black-messy.
Step 1. Boil hot water, put Binchotan in it for about 10 minutes
Step 2. Let it dry completely – I’d say overnight, at least +12 hours.
When you do that you don’t need to worry about your hand will be black-mess.
It’s clean and ready to use!
How to keep Binchotan Fresh
Do not leave binchotan outside. It will suck moisture in the air.
Use some plastic bags, pack them tightly.
Even though you pack them, they will still suck moisture…so try to use them within 3-6 months.
If you can’t pack with plastic bags, try to use it within a month.
Here’s what you can do with Binchotan (soooo many!)
1. Water Filter
Binchotan contains millions of micro small holes. They suck “bad” materials from water and purize it.
Place Binchotan into a container for at least 24 hours before drinking it.
It’s because we want to wait for mineral in binchotan to be dissolved.
2. Shoe Closet (remove bad smell)
Shoes can be stinky and that’s quite normal. Place some Binchotan in a Manson glass jar to help takes odor away.
If you have broken, small pieces of Binchotan then put it in aand place directly into stinky shoes.
3. In a car
Car has special smells…. it’s a closed area, with machines, food, oil, pets, drinks, human’s sweat on a seat…. cars can be stinky.
Place some binchotan.

4. In a closet
Place Binchotan into a closet.
5. In a fridge
Place some binchotan into a fridge. Just like baking soda, it takes smells out.
6. Cooking Rice
I’ve used this method before 🙂 Rice texture and taste gets better with Binchotan. Try it!
Simply you can place a Binchotan into rice cooker, close the lid and cook.
You can of course use it for a normal pan, to cook rice with binchotan.
Binchotan purize the water while cooking rice. Also mineral in binchotan will be dissolved well into rice pieces.
7. Flower Vase
It gives good water to the flower, also some air. When you put a binchotan in a water, you start to see small bubbles coming out? They are good for plants and food 😌
8. For Deep Frying
I’ve used this when I made Tempura!
You can put a binchotan into oil ( *** be sure to place it when oil is cold) . Binchotan will help tempura to be crispy.
In Japan, some expensive Tempura specialized restaurant use charcoal in their oil, too.
But if you use it for tempura, you can’t wash it re-use it for other methods because it’s too greasy.
If you use it for deep frying, use the same binchotan for same deep frying.
At home, I assume many people re-use their deep frying oil twice or so? You can use it 4 times or so if you put binchotan.
It’s because binchotan protects oil from becoming oxidizing.
9. For your garden
You can recycle Binchotan. Break binchotan into small pieces, mix with soil, then plant.
It’s not that Binchotan is fertilizer but mixing with soil will give a good balance for water, air, which helps plants to grow better.
10. For Your Sleep
Binchotan can help you to sleep better! Your breathe, sweat, skin-oil, there can be many reasons of bad smells.
Binchotan will take those bad smells away.
Binchotan also clean air, which helps you to sleep better – it’s like, you sleep in a forest.

11. For a Bath
Place binchotan in a bath. It’s the best to put about 30 minutes before taking a bath.
Binchotan has ultra‐red ray effect that keeps your body warm after bathing.

12. For Teeth
It is said that Binchotan breaks water cluster, takes away odor, helps taking off dental calculus.

12. For Grill
oh yes… this is one of the BEST ways to use Binchotan.
Some fancy Yakitori shops use Binchotan for grilling. Personally I have never used this way so I am not sure how to start fire and such… but any food you grill with charcoal, we know it tastes 10 times better!
